Easy and Crispy Southwest Chicken Wraps {Recipe}

I am bored.  Tired of eating the same things over and over again…and so is my family.  In an effort to spice up dinner, I took to my new favorite playground, Pinterest, and found an incredible, delicious and easy Southwestern recipe.  It was a huge hit tonight as the kids even asked for seconds so I knew I had to share.  Enjoy!

What you will need:

1 cup cooked rice
1 cup cooked, shredded chicken (we used rotisserie)
1 green onion, finely sliced
1/2 red pepper, diced
1/4 cup fresh chopped cilantro
juice of 1 lime
1/2 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt
2 cups shredded cheese
Low fat Sour cream
6 flour tortillas

How to Make It:

We used the Boil in Bag Rice and boiled according to the directions while we chopped the seasoning (by the way, the seasoning smells incredible when it’s all mixed together!).  When the rice is ready and drained, mix in the chili powder, cumin and garlic salt. When completely mixed, add remaining ingredients except for the cheese and sour cream.

Time to assemble the wrap!  We chose to assemble on a large baking sheet for easy preparation.  Lay out two tortillas and sprinkle with cheese leaving 1/2-inch border around edges.  Add a dollop of sour cream to the center of each tortilla and then arrange chicken and rice mixture down the center.  Roll the stuffed tortillas tightly and spray all over with cooking spray.

Pre-heat a large non-stick skillet over medium heat.  Arrange the 2 completed wraps, seam-side down, in the pan and cook until golden brown and crisp which took about 2 minutes per side. Serve hot with a dollop of sour cream for dipping! Delicious!

This recipe made 7 chicken wraps and took less that 30 minutes from start to finish! Enjoy!

Dancing Ribbons from CP Toys {Review and Giveaway}

In my home, I have two dancing princesses.  Ballet, tap, jazz and tumbling are all part of our weekly routine.  In fact, when we are not at the dance studio, the girls are choreographing their own routines complete with imaginary students and kid’s toys turned creative props.

Last weekend was, to put it lightly, insane.  My son had a soccer tournament both Saturday and Sunday where he and his team would be playing back-to-back games with not a lot of time to refuel in between.  I needed to make sure he ate something healthy and filling for breakfast, but something that wouldn’t weigh him down on the field.  Kashi offered the perfect solution!

Cinnamon Crumble offers a bowl packed full of TEN grams of protein and nine grams of fiber, making you feel fuller longer.  My son sat down with a bowl the morning of his first tournament game.  While I don’t buy super-sugary cereals, I have never purchased Kashi before, so I wasn’t sure how he’d react. The Cinnamon Crumble is a brand-new flavor but a good friend has sworn by Kashi cereals for years with her two kids.  I had nothing to worry about….he loved it!  I had a bowl too and agree that it’s the perfect blend of cinnamon and crunch.  It’s not overly sweet, but it definitely lacks the cardboard taste some high-fiber cereals have.  I have since added it to my weekly grocery list!

The best news is that he stayed full with the long and active morning, and had a great game! Pointers for Perfect Portraits!

When I was a kid, I felt like time crawled.  I couldn’t wait to be 10, 11, or 12 and certainly couldn’t wait for Summer.  But now that I have kids of my own, time flies!  If I so much as blink, it seems like the kids grown an inch or even two.  In an effort to capture these precious moments, I take pictures…and lots of them!  Over the years, I have learned a thing or two about how to create some wall-worthy photos and thought I would share them with you.

1.  Color Coordinate!  If you are taking a group pictures, choose colors that compliment each other and aren’t too loud or busy.  Because my girls are three years apart, the older does NOT watch to wear matching outfits with little sister.  I try to find outfits that compliment but aren’t too matchy matchy.

2.  Lights, Camera, ACTION!  There is nothing like natural light to make a great photo.  I love candid shots of the girls playing and showing off their personalities which most often happens during play.

3.  Give Your Pictures Some Props!  I love incorporating props to show off the season but that don’t overwhelm the photo.  I still want the eye to be drawn to my child and use the prop only to enhance the scene or explain the season.

Recharge Your Favorite Science Teacher with the Help of Rayovac

Oh yes, this is totally me. Don't laugh.

As a young child, I begged my parents for science kits.  I had a microscope and put just about everything under it to get a closer look.  I was fascinated by the world of science, but knew at an early age that I didn’t want to be a doctor.  I had no idea that science could be an actual career without going to medical school.

As a sophomore in high school, I enrolled in Biology…the dreaded course of all sophomores.  It was deemed the hardest and most intense class at my all-girls private school.  To my surprise, biology came easy to me and my teacher, Mrs. Fay Lewis, took notice.  She invited me to compete in an academic rally in biology on behalf of my school and later asked me to assist in biology experiments for our Open House.  I was hooked.  The confidence that Mrs. Lewis instilled in me is directly responsible for attainment of both a Bachelor’s and Master’s Degree in Biological Sciences.  Fortunately, I have had the pleasure of meeting Mrs. Lewis (almost 20 years later, yikes!) and thanking her for making such a difference in my life.

Sometimes Life Isn’t Easy

Sometimes life is not easy.  Ok, most of the time life isn’t easy.  I haven’t discussed it much (or at all) here on my blog, but I recently lost the job I have held for the last 17 years.  The job I loved and trained for in many years of school.  I worked for the Federal Government and due to recent budget cutbacks in the Sciences, my department and my research was terminated. Enter stress, anxiety and depression (maybe the the PCH Treatment would help?).

And life suddenly becomes harder.

Unfortunately, it is not an option for me to stay home with the kids.  My family depends on my salary so I am in the process of picking up the pieces and finding something new.  Have you looked for a job lately?  The job market is beyond horrible.  Maybe I have always been naive, but I really believed that if I worked hard in school I would never find myself in the unemployment line.  Funny, right?

I have spent the past several weeks cleaning out my office and sifting through memories of the last 17 years.  Difficult doesn’t even describe it.  Downright depressing pretty much sums it up.  Day by day, I feel my mood sink, my muscles tighten and my stress level rise.  Each day without a job offer or even so much as an interview sends me into a panic.

I am completely aware of my predicament.  I feel myself slipping into a depression and am doing everything I can to stop it.  Everything happens for a reason, I repeat.  This is my new mantra.  I am doing my best to take care of me so I can rise and face the challenge of starting over.  A massage, a yoga class, lunch with friends and time with family are helping me realize what is really important.

Get Up and Hurry Up: Tyson Breakfast Bread Bowls Make Our Mornings!

Mornings in my home are remarkably similar to marathon races.  From the time my alarm clock goes off to the time I sit down at my desk at work is a whirlwind that definitely gets your adrenaline pumping.  But despite the fast pace, I want to make sure my kids are provided with a hot breakfast to give them the best shot at having a successful day at school.  As tempting as cold cereal or toasted Pop Tart may be, I am always looking for something better but just as quick and easy.

I was so excited to learn about Tyson Breakfast Bread Bowls and couldn’t wait to head to our local Sam’s Club to try them out.  After checking out the Tyson selection, we decided to try the Sausage variety first.  At Sam’s, for $9.95 you get six servings which consists of two Breakfast Bread Bowls.

To make breakfast a hit for school mornings in my home, the menu needs to be quick, easy and fast.  I loved that the servings are individually wrapped making them easily accessible for my 7 year old daughter.  By simply placing the #TysonBreakfast on a microwave safe plate, you get a hot and delicious breakfast in just 50 seconds.  Can’t beat that in a time crunch!

My daughters both loved the Tyson Breakfast Bread Bowls and are now requesting them on a regular basis.  As a busy Mom, the convenience was definitely an added bonus!  We plan to purchase more on our next Sam’s Club shopping trip!

Neatnik Saucer High Chair Cover: Review and Giveaway

One of the many things I have learned from having young children is that when we do get up the courage to go out to eat it definitely can’t be a fancy place.  Having a one year old that likes to throw food on the floor along with all of her toys, crayons and coloring sheets limits our selection of establishments.  We have had different types of highchair covers in the past but the Neatnik Saucer is the king of all high chair ‘covers.’  The Neatnik is in a class all by itself, it is far superior to ANYTHING that you have ever seen before.  I wasn’t to sure about it when I first received it, but I decided to give it a try and boy was I impressed.   There are so many wonderful features to the saucer I don’t know where to start.

We received the Rome which is black on the bottom and white on the top.  The black part is the only part that actually touches the highchair itself which has not yet gotten that dirty look to it.  The white surface on top is wonderful for your little one to draw his masterpiece.  My daughter used the crayons that came with the Saucer as well as the standard restaurant crayons and drew until her little heart was content.  When we were ready to eat I took a baby wipe to clean the surface of all the crayola markings which came up with ease.

Like most one year old babies there is nothing neat about a meal.  The saucer kept all of the food on her ‘tray.’  I couldn’t believe my eyes when I got up from the table and there was nothing on the floor not a single crumb.  I was so excited and actually wasn’t embarrassed leaving the restaurant.  Other great features about the Neatnik are the suction cups on the bottom.  You simply unfold in the highchair and suction cup the front to the table.  No matter how hard she tried she was unable to pull the suction cups off the table.  There are also velcro on the sides for your child’s favorite toy or pacifier.

The hardest part about the saucer was learning how to fold it, so I watched the online tutorial and after a few tries I was a pro at fitting it back into the little bag  for easy portability.  I actually look forward to going out and being able to use it because it makes life so much easier.  Last weekend we used it and I counted six people who asked me where they could get one; I actually think one lady wanted me to sell it to her!  With the Neatnik Saucer you are now free to eat at the fanciest restaurant in town.  Happy dining!!!
