The Oklahoma Outstandwich!

Recently, I participated in a virtual sandwich road trip with KRAFT and shared with you my recipe for the New Orleans French Fry Po-Boy.  I invited you to share with me your favorite regional recipe for a chance to be featured on the new KRAFT Outstandwich site launching July 18th and a $100 AMEX gift card.  After the panel and I read through every single recipe (there were some incredible ones!) and making a few of them ourselves, we decided that the winning recipe was:

“The Chicken Dance Sandwich”

What you Need:

1 to 2 lb package of fresh chicken tenders
1 box of Tabasco flavored cheese crackers
1 8oz of sour cream (or you could do yogurt)
1 packet of your favorite Taco Seasoning mix
1 package of sliced baby swiss cheese
slider buns or regular buns

dressing condiment
1/4 cup of ranch dressing with 2 tablespoons of salsa mix in

How to Make it:

Wash and pat dry the chicken tenders. In a food processor (or ziplock and heavy object) crush the Tabasco cheese crackers. Next mix the packet of taco seasoning into the 8oz of sour cream. Dredge the chicken tenders through the sour cream mixture and then roll in the crushed cheese it crackers. Place in a casserole dish and bake at 350 for 20 to 25 minutes. You are looking for a deep coppery color on the crust. Toast or steam the buns. Then place the chicken tenders on bottom bun and drizzle with the southwestern dressing. Place swiss cheese on top of chicken and cover with foil to melt cheese. Next dress with lettuce, onion or tomato or nothing else….it is up to you! Place the top bun on and chow down.

My Outstandwich: New Orleans French Fry Po-Boy ( and $100 AMEX Giveaway)

If you are looking for a healthy, low calorie sandwich idea….you are in the wrong place. In fact, avert your eyes and shut your browser because you may just become tempted to make this New Orleans staple.  For those of you here looking for a satisfying, scrumptious and inexpensive meal….look no further!

Recently, I was contacted by KRAFT foods to participate in a virtual sandwich road trip to share my favorite regional sandwich with my readers.  The recipe will be featured on their new site, Outstandwich, and will launch on July 18th.  Now, if you’re a NOLA native like myself, you know that Sandwich=Po-Boy here in New Orleans.  And one Po-Boy on every menu is the “French Fry Po-Boy” which I will share with you today.

Before I begin, what’s a New Orleans recipe without a little history, y’all?  I found this great explanation on FrenchQuarter.com:

As with most elements of New Orleans history, the origin of the po-boy has competing versions flavored over the years by creative storytellers and self-appointed authorities of dubious veracity. But the most widely accepted story holds that the sandwich was invented by Clovis and Benjamin Martin, brothers and former streetcar drivers who opened a restaurant on St. Claude Avenue in the 1920s. When streetcar drivers went on strike in 1929, the brothers took up their cause and created an inexpensive sandwich of gravy and spare bits of roast beef on French bread they would serve the unemployed workers out of the rear of their restaurant. When a worker came to get one, the cry would go up in the kitchen that “here comes another poor boy!,” and the name was transferred to the sandwich, eventually becoming “po-boy” in common usage.”

The Po-Boy is a tradition and the French Fry version is no exception!  It is generally the most inexpensive po-boy on local menus, but don’t be deceived, it is excellent in taste!

What you Need to Make It:

One loaf of French Bread

Miracle Whip

Frozen French Fried Potatoes

1/4 cup beef drippings

3/4 cup water

Brown Gravy Mix

Shredded Cheddar Cheese (KRAFT Triple Cheddar Shredded Cheese)

How to Make It:

If you have the talent, feel free to steak cut potatoes and bake or fry them to your liking.  Or, if you are short on time, frying some frozen french fried potatoes (shoestring is my favorite) will work just fine.  While the potatoes are baking/frying, make the brown gravy according to the packaged directions.  For a beef flavoring add 3/4 cup of water and 1/4 cup of beef pan drippings from a previous meal.  Cut a 12″ piece of French Bread from the loaf and cut horizontally to open the bread.  Slather the bread with Miracle Whip, add french fries and pour on a hearty amount of the prepared brown gravy.  Add cheese.

If you are in New Orleans, you may have the option of ordering your sandwich “dressed.”  No, this doesn’t mean that your sandwich will arrive with a shirt and pants!  If you order your po-boy dressed, it will arrive at your table with mayo, lettuce and tomato.

Finally, press your sandwich closed, slice in half, and enjoy the yummy-ness!  HEAVEN!

Save Time with KRAFT Homestyle Macaroni and Cheese: Giveaway

Weekdays around my home are extremely hectic.  With both my husband and I working full time outside the home, our time with the kids can be limited.  The last thing we want to do is spend hours in the kitchen preparing dinner when we could be spending quality time with our girls. In order to make our home run smoothly each week, my husband and I make both meal and shopping plans and try to get as much done on the weekends as possible.

If you read this blog, you know that my strengths do not lie in the kitchen.  While I am definitely getting better, I still rely on baking kits and prepared mixes.  Recently, I was able to try the new KRAFT Homestyle Creamy Parmesan Alfredo Macaroni and Cheese and see how it would work with our lifestyle.  I mean, any product that makes me look better in the kitchen is worth a try, right?

The KRAFT Homestyle had a few more steps than a traditional boxed mac and cheese dish, but was still incredibly easy.  Within just a few minutes, you could smell the wonderful aroma and my kids wanted to know what I was cooking!  The dish tasted as good as it looked, too! We added seasoned grilled chicken breasts and had a wonderful meal ready in minutes.

Kraft Ultimate Sandwich Makeover {Panini Press Giveaway}

Here in New Orleans, we say that you judge a sandwich by how many napkins you use.  Actually, we don’t call them sandwiches at all….it’s po-boy if you’re from around these parts.  These delicious slices of heaven are generally served on fresh French bread and can include anything from fried shrimp, cajun sausage, french fries and even soft shelled crabs.  But my all time favorite is a roast beef po-boy. What you Need:
2 slices Italian bread

3 strips roasted red peppers
1 small pepperoncini peppers, stemmed, sliced

How to Make It:
  1. Spread 1 bread slice with mayo. Fill bread slices with all remaining ingredients except dressing.
  2. Brush outside of sandwich with dressing.
  3. Cook in skillet on medium heat 3 min. on each side or until golden brown on both sides.

Valentine’s Day Cookie Ball Recipe from Kraft

Lovesick Cookie Balls

1. Prepare OREO Cookie Balls or any other Cookie Balls recipe. Refrigerate until firm.

2. Meanwhile, cut each JET PUFFED MARSHMALLOW crosswise into 4 slices. Cut small notch out of each slice for each pair of feet.

3. Dip sticky side(s) of each marshmallow slice in colored sugar.

4. Attach 1 cookie ball to sugar-coated side of each marshmallow slice with small amount of melted chocolate, allowing feet to stick out from bottom of each ball.

5. Decorate with assorted candies, chow mein noodles, tinted melted BAKER’S White Chocolate, melted BAKER’S Semi-Sweet Chocolate, JET PUFFED Miniature Marshmallows, toasted BAKER’S ANGEL FLAKE Coconut, Mini OREO Bite Size Chocolate Cookies or Mini NUTTER BUTTER Peanut Butter Sandwich Cookies as desired.

Note: To decorate balls with piped chocolate, melt BAKER’S White Chocolate as directed on package; tint with desired colored food coloring(s), adding 1 drop food coloring for each square of chocolate. Pour melted chocolate into resealable bag; seal bag. Cut small corner off bottom of bag; use to pipe chocolate onto balls as desired.

Great American Backyard Campout with Hershey’s: Giveaway

results For us, the Fourth of July is generally low key.  We don’t do big parties or elaborate fireworks displays, but prefer spending time with our immediate family making lasting memories for our children.  This year, my youngest daughter was ill, so our usual swim activity just wouldn’t work out.  So, I was thrilled to get the opportunity to share with you some fun ideas from the Kraft More S’mores More S’miles website.  For example:

Grilling up Sweet Treats Sweeten your next backyard barbecue by adding S’mores to the menu. As an alternate to toasting a marshmallow on a skewer, simply preheat the grill to medium-hot. Build the S’more to your liking and wrap in aluminum foil. Place the wrapped S’mores on the grill and cook 1 to 2 minutes on each side or until marshmallow is gooey and the chocolate slightly melted between the graham crackers. Try Limited Edition Honey Maid® Squares, perfect for S’mores.

After we ate the yummy barbeque hamburgers my hubby made for us, we decided to let the girls build their own S’mores.  This was a great activity that even my youngest daughter could participate in.  After only a few minutes on the grill, the S’mores were warm, gooey and ready to be eaten!  We each ate one before watching the fireworks in our neighborhood from our porch swing.

Even though it was low key, we had a wonderful time!

Kraft Foods Gift Basket GIVEAWAY!

As a Mom of two little ones and also a woman who works outside of the home, my time in the kitchen is quite limited.  The key for me is planning, planning and more planning.  I find the weeks that I don’t plan my dinner menus turn into kitchen chaos and eating out way more than I would like (or than my budget can handle).  After checking out the Kraft Foods website, I am hoping the recipes and meal planning tips will help me save time and my sanity!

I love the YouTube channel because, since I am not too handy in the kitchen, actual videos of the recipes helps tremendously.  Check out this video of Philadelphia Marble Brownies!
