Complete your Memorial Day with Frito Lay! Giveaway!

Many members of my family served our Country in several branches of the armed forces.  My Grandfather served in the Navy (WWII), my Uncle was also in the Navy during times of peace, my husband’s father served in the Army (WWII) and my Father in Law was a member of the Air Force (Vietnam).  On Memorial Day, my family definitely takes time out to thank our family members who served this Country to ensure our Freedom.  In addition to our thoughts and prayers, we also celebrate!

How to you plan to celebrate Memorial Day?

Whether it be a beach vacation, picnic or barbeque, Frito Lay has some great products to complete your meal!  The website has some great ideas for recipes and healthy snacking options including this Baked Bean Dip:

Ingredients:

  • 1 slice bacon
  • 1 (15 ounce) can baked beans
  • 1 tablespoon grape jelly

Directions:

Cook bacon in large skillet until crisp. Remove bacon, crumble and set aside. Drain bacon grease but do not wipe out pan. Add can of baked beans (including sauce). Bring beans to a boil. Stir in grape jelly and reduce heat. Simmer until liquid is reduced by half (about 5 minutes). Mash beans with a fork or potato masher and allow liquid to absorb. Add crumbled bacon. Serve with Fritos corn chips. Makes 8 appetizer servings

Nutrition analysis: 86 calories per 2 oz. serving, 2g fat (0.7g saturated fat) per 2 oz. serving, 3 mg cholesterol per 2 oz. serving, 283 mg sodium per 2 oz. serving, 13.2 g carbohydrate per 2 oz. serving, 2.8 g fiber per 2 oz. serving, 3.8 g protein per 2 oz. serving.

Be ready to “Party in a Pinch” with Frito-Lay! Giveaway!

The holidays can be a blur between cooking, cleaning, shopping, wrapping, and getting together.  Just when you think you can’t cram another thing in, you get that last minute call from someone in town who is about to stop by.   When the holidays approach, I try to keep a stash of quick snacks on hand so I am not left hanging when the unexpected guest pops in.  Thank goodness for Frito-Lay!

One of my favorite dips takes almost no time to prepare but is soooo good your guests will think you’ve been cooking all day!

BROCCOLI-CHEESE DIP

1 stick butter

1 large onion, chopped finely

1 roll garlic cheese, sliced

1 can cream of mushroom soup

1 can mushroom stems and pieces, drained

1 frozen block chopped broccoli

Frito-Lay Tostitos, Baked Tostitos, or Fritos Scoops (I like the Scoops best)

Boil broccoli until tender, drain.  Saute onion in butter until clear and tender.  Reduce heat, add garlic cheese, stir until melted.  Fold in soup, mushrooms, and drained broccoli, heat through.  Serve with your favorite Frito-Lay chips!

Your guests will think you went to a lot of trouble but only you will know the secret and come off looking like June Cleaver!  Go ahead, make me proud!

Because I have recently started losing weight, I have been dreading football season.  New Orleans natives are die-hard Saints fans and with our loyalty comes our FOOD!  Tailgating parties usually include chicken wings, hamburgers, hot dogs, donuts, and jambalaya.  While quite tasty, none of these options are particularly diet friendly.  So, when Frito-Lay challenged me to come up with a “better-for-you” tailgating recipe, I was all over it!  After calling Jennifer for a recipe to start from (y’all know I don’t cook!), we decided that making a chili cheese dip would be awesome!

I started by packing down some fat-free cream cheese at the bottom of a dish.  In a bowl, I mixed one can of turkey chili with one can of Frito-Lay’s jalapeno cheddar cheese and poured the mixture on top of the cream cheese.  I topped with shredded cheddar and baked for 15 minutes at 350 degrees.  The dip was served with Fritos in my really cool football dish!  Very easy and much lower in calories that the traditional chili-cheese dip.
